Sausage, Tomato and Ricotta Pasta

Ingredients: | Method: 1. Cook pasta in a large saucepan of boiling salted water, following packet directions until tender 2. Meanwhile, heat oil in a non-stick frying pan over medium heat. Cook sausages for 10 minutes or until cooked through. Transfer to a plate. Thickly slice. Add tomatoes to pan. Cook for 2 minutes 3. Drain pasta reserving 2 tablespoons of cooking water. Return pasta and water to pan add sausage, tomato, shredded basil and salt and pepper. Toss over low heat until combined 4. Spoon pasta into bowls. Top with ricotta and bail. Season with pepper. Drizzle with oil an serve. |
Curried Sausages

Ingredients: | Method: 1. Prick sausages and place in saucepan with enough cold water to cover, and add vinegar 2. Bring to boil and simmer gently for 10 minutes 3. Drain, cool and remove skins from the sausages 4. Melt butter in a saucepan and fry onions, apple and curry powder 5. Stir until the onions are soft 6. Add stock and bring to the boil while stirring 7. Add sausages and simmer for 10 minutes 8. Blend cornflour with the water and add to sausages, stirring until the mixture boils and thickens 9. Serve with rice |
